Introducing Issue 07: The Volcano Issue.
We’ve always been interested in what makes an ingredient what it is, how the landscape and the locality can be felt and tasted in the final produce. For this issue, we have turned that thinking to volcanoes; these brutal and prehistoric features that shape landscapes, lives and culinary traditions across the world.
From Java to Sicily, with many places in between, we’ve gathered stories far more complex and varied than we were expecting. We’ve seen winter tomatoes and volcanic cocoa, tasted fruit grown in the shadow of Mount Etna and wine made amidst black sand beaches.
Rahel Stephanie has written about a community living in the shadow of a volcano so active that rebuilding is part of a cycle, not an exception. Other contributors include Anna Granola, Ana Ortiz and Katy Severson, and there are also interviews with Joke Bakare and Ciccio Sultano.
