With this issue, we wanted to shine a light on the role that meadows play in our food system, something particularly important as they're wiped out at unprecedented speed.

Maybe the most obvious example comes in the variations of honey, which taste completely different based on the landscape, flowers and time of year in each meadow. There’s also a pioneering cheesemaker in Ireland, the Italianate vigneron of southern Brazil and the bakers revisiting the grains they use.
